A delicious and quick dinner! My toddler loves this meal and is quick to the table when it is served.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 14 ounces smoked sausage (or kielbasa, diced)
  • 1/2 white onion (medium, diced)
  • 1 cup white rice
  • 2 cups low sodium chicken broth
  • 14 ounces pinto beans (rinsed and drained)
  • 1/2 teaspoon italian seasoning (dried)
  • 1/2 teaspoon garlic powder
  • 1 tablespoon dried parsley
  • salt

    Directions

    1. Heat the oil and butter over medium-high in a large rimmed skillet (make sure your skillet has a lid!). Add the sausage and onion, and sauté until onions become soft and translucent.
    2. tir in the rice and cook for an additional minutes while frequently stirring. Add the chicken broth, beans, Italian seasoning, garlic powder and parsley. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 20 minutes or until rice is tender. Make sure to stir the mixture to o prevent sticking or burning. Remove from the heat and season with salt and pepper if desired. Serve immediately.
