This is a marvelous 5-star basic recipe for skillet potatoes! As is noted, red potatoes are the best choice and I used early baby red potatoes which I quartered. I cooked them in a 12-inch well-seasoned cast iron skillet until nicely crusted and golden brown outside but creamy-tender and sweet inside. The only change I made was to substitute smoked paprika and add some dried parsley flakes but any choice and/or combination of seasonings would work well. A good sharp cheddar (or cheese of choice) would pair beautifully with larger winter red potatoes.
