This is delicious! And really only took about 20 minutes to cook. The Mushroom and Tomato saute on top is perfect. I served this with an undressed arugula that I tossed with halved green grapes and sliced pears. My husband kept commenting on how good the tomatoes were. When you saute them the insides soften enough to become really liquidy, but its not weird. My husband kept called them "sauce balls" but we decided that wasn't a good connotation, so he switched it to little balls of marinara... still weird but true. A bite with the tomato and any other part of the dish is like having a perfectly sauced bite of food. We are going to use this saute topping for chicken, and I want to try it over a nice Halibut or Cod steak as well.
