We had jalapeno feta on hand and it added a little more heat. It was delicious, would definitely make again.

Delicious recipe! Great with fresh corn, but we’ve also used frozen (and browned in skillet) - still yummy! This has become a staple at our house.

This is a really great recipe- FULL of flavor! We had the grill going for burgers, so we charred the corn on the grill, then cut the kernels off and finished on the stovetop. Everyone loved it- the cotija really makes it!

Made this for the first time and my family LOVED it. We had it with flank steak, but everyone was thinking of new ways to sever this. Most even said it would be good just with tortilla chips. This will be a definite summer staple when fresh corn is plentiful. My wife said it was even better than the street corn we had in Miami. Highly recommend.
