This was amazing and still great on day 3 for some comfort food! I used what I had on hand which was 3 oz chipotle Gouda, 3 oz Muenster, 6 oz shredded Colby jack and 2 oz Parmesan. I also substituted part-skim ricotta cheese, 2% milk and only used 1/2 cup mayo. Next time, I will definitely do full 8 oz sharp cheddar instead of Colby jack since my version ended up more of a white Mac and cheese. Still so creamy and delicious, best one I’ve ate yet!
