- 2 cloves garlic (minced or grated)
- 4 oz. spanish chorizo (sliced)
- 4 oz. heirloom tomatoes (chopped OR 1, 15 can whole peeled san marzano tomatoes)
- 1 oz. roasted red peppers (sliced, 8)
- 1/4 cup white wine
- 2 cups jasmine rice
- 4 cups chicken broth
- 2 skinless chicken thighs (small, or breast)
- 1/3 cup blue cheese (stuffed green olives)
- 1 tsp. Spanish smoked paprika
- 1 tsp. salt (+ pepper to taste)
- 1 pinch saffron
- 16 oz. fresh seafood (I used 1 lobster tail 6 jumbo shrimp, 4 clams, and 4 mussels)
- 2 lemons
- chopped parsley (fresh, for serving)
- white truffle oil (for serving, optional)
