- 3 Tbsp. shallot (finely chopped, or yellow onion)

- 2 1/2 tsp. cornstarch
- 1/2 cup tomatoe (sun dried, halves packed in olive oil with herbs, finely chopped, this can be done in a food processor)
- 1/4 cup heavy cream
- 1/3 cup shredded Parmesan cheese (finely)

this was very lovely my husband really enjoyed it and my picky gal too suprisingly ate everything. definitely doing it again.we had it over mashed potatoes and it was lovely

Overall, very yummy! Chicken was a little dry, maybe because I left it on too long. Sauce was very thick—probably will add more broth and a bit less cornstarch next time. There wasn’t enough sauce for pasta like the recipe said. Be modest with the salt, especially if the sun dried tomatoes are already salty. I added a pinch of chili powder too for a kick. Didn’t have basil so topped with cilantro.

It was wonderful! My family enjoyed it very much. Definitely a recipe worth saving.

I had to modify the cooking time, I had 2 pretty big thick chicken breasts. So I cut them in half when I put them in the sauce and continued to cook for about 5 more mins on low. Serve with brown rice pasta! 👍🏻that will be a repeat!
