- 2 Tbsp. olive oil
- 12 oz. roasted red peppers (drained)
- 3 cloves garlic (large, rough chopped the blender will do the rest of the work)
- 1/4 cup fresh basil (or 1 tablespoon dried)
- 1/4 cup chicken stock
- 1/4 cup half and half (heavy cream, in a pinch but beware it can curdle if heated to fast and allowed to simmer to hot)
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. chili flakes (optional)
- 1/2 cup cherry tomatoes (optional)
- 1/2 cup crumbled feta
- 1/4 cup sauce
- fresh basil (Additional, to garnish optional)
