- 1 packet taco seasoning (Old El Paso)
- 1 1/2 Tbsp. water
- 1 cup half-and-half cream
- 2 cups instant white rice
- 1 cup queso blanco (premade, white queso from the store, I really like Gordo’s brand, melted)
- 1 cup salsa (restaurant style, thin salsa)
- 1/4 fresh cilantro (plus more for garnish)
- 1 can Old El Paso Green Chiles
- 1/2 cup pico de gallo (or chopped tomatoes)
- 1 cup mexican blend cheese

First off, do yourself a favor and make the "homemade White Queso Recipe" provided in this link...and I suggest a few days before making this skillet. It makes ALOT of queso and stores well in a sealed mason jar. I even froze some because i had so much. when your ready to make this skillet recipe, grab your premade queso and it will cut down your prep time. I did not reheat the the queso when adding to the skillet...just spooned a few large spoonfuls in during the skillet cooking process (Add to taste! if you like it cheesier then add alot, if not, add a little.) This skillet is great by itself, and I made according to recipe the first time. the whole fam liked it. the 2nd time, I premade and added some cilantro lime rice (this recipe just calls for regular rice), plus a can of black beans. We put it into burrito shells with lettuce and white/mexi shredded cheese. it was exactly like getting a chicken queso burrito from Qdoba!! very very tasty, very easy as long as you premake the queso, and now we will only make this recipe for burritos.
