- 8 oz. mai fun (thin rice noodles, soaked and drained)
- 2 Tbsp. curry powder
- 3/4 tsp. ground turmeric
- 1/4 tsp. crushed red pepper flakes (1/2 if you want it spicy)
- 1 pinch salt
- 1 pinch ground white pepper
- 2 tsp. coconut palm sugar
- 1/2 tsp. rice vinegar
- 2 1/2 Tbsp. cold water
- 1/4 cup coconut aminos (or 1/4 cup gluten free low sodium Tamari)
- 2 Tbsp. avocado oil (divided, or other high heat oil)
- 3 large eggs
- 1 lb. boneless skinless chicken thighs (or breasts, trimmed of any visible fat and thinly sliced into 2" to 3" long pieces)
- 3 cloves garlic (smashed and finely chopped)
- 1 inch fresh ginger root (piece, peeled and finely chopped, approx. 1/2 Tablespoon)
- 1 yellow onion (medium, halved and thinly sliced)
- 4 cups green cabbage (shredded)
- 1/2 cup shredded carrots
- 3/4 cup snow peas (thinly sliced)
- 1 Tbsp. toasted sesame oil
- 2 scallions (sliced into 2" diagonals for serving)
