- 8 oz. noodles (rice stick noodles, Bihon)
- 3 cups chicken stock
- 2 carrots (peeled and sliced thinly in roughly 2-inch pieces)
- 6 celery (ribs, sliced thinly on a diagonal)
- 2 stalks green onions (sliced in 2 inch pieces)
- 1 cup bean sprouts (you can omit but I like them)
- 4 oz. barbecued pork (Chinese)
- 8 shrimp (large raw, peeled and deveined)
- 2 curry (generous teaspoons Madras, can be found in Asian markets; regular curry powder would work, too)
- 2 Tbsp. soy sauce
- 1 Tbsp. rice vinegar
- 1 1/2 tsp. sugar
- 1/2 tsp. salt
- 2 Tbsp. oil (for sautéing, I use grapeseed)
- lemon wedges (for serving)
- soy sauce (for serving)

Awesome, I put too many noodles so no sauce left and curry was weak, but know how to fix it next time..... I would like it to be a little spicier
