- 6 medium carrots (roughly cut into 2 inch chunks)
- 1 yellow onion (large, thickly sliced)
- 1 Tbsp. fresh thyme
- 20 chicken
- kosher salt
- fresh ground black pepper
- 1 Tbsp. avocado oil
- 1 lemon (quartered)
- 1 head garlic (cut in half crosswise)
- 2 Tbsp. ghee (melted, can sub butter if not Whole30/Paleo)
