- 4 strips thick cut bacon (cut into halves)
- 12 oz. canned salmon (about 2 cans - I used these amazing, sustainable canned salmon bellies)
- 1/2 cup panko bread crumbs
- 1 Tbsp. dijon (or Stone Ground Mustard, I used this Backyard Brat Mustard from Saucy Mama)
- 2 eggs
- 1/2 cup fresh parsley (chopped)
- salt
- fresh ground black pepper
- 1 Tbsp. extra-virgin olive oil
- 4 sandwich rolls (your favorite, halved, I used whole wheat ciabatta rolls and they were delicious!)
- 1 cup arugula (fresh)
- 1/2 tsp. extra-virgin olive oil
- 1/2 tsp. lemon juice
- salt
- fresh ground black pepper
- 1/3 cup ranch dressing (Saucy Mama Poblano, see recipe notes)
