    I found it too moist as a bread loaf. I omitted the coconut milk and made muffins instead. Much better as pumpkin muffins than pumpkin bread. I added mixed seeds, chia seeds, cranberries. In fact you can add absolutely anything to your batter and it will turn out amazing!
