Here's fluffy, light, and perfect cheesecake, done the New York way. Plan ahead for this one - for best results, this cheesecake needs at least 6 hours to chill after baking. The recipe is a Yummly original created by Sara Mellas.

- butter (softened, for pan)
- 8 oz. honey graham crackers (8 oz. is about 12 crackers)
- 1/4 cup light brown sugar (packed)
- 1/4 tsp. canela
- 1/8 tsp. salt (for crust)
- 1/2 cup unsalted butter
- 2 lb. brick-style cream cheese (room temperature)
- 1 1/8 cups granulated sugar
- 1/2 cup sour cream
- 1 Tbsp. vanilla extract
- 1/8 tsp. salt (for filling)
- 4 large eggs (at room temperature)

Directions
- Preheat the oven to 400°F.
- Lightly grease the sides of a 9-inch spring form pan with softened butter.
- Cut a circle of parchment paper to fit the bottom of the pan. Lay the circle on the bottom of the spring form pan.

Luckily this recipe helped me save another cheese cake recipe when i realized over halfway through the other recipe the sour cream was missing and the baking called for 22mins and no water in over, so i had began to worry the recipe i started with wouldn't turn out. Sure enough by deviating to this recipe directions I saved the 5 cheese cakes and while not NY style, they're salvaged. I will be using this recipe from now on and not risking chaos of other weird short cuts or changes esp without explanation. This recipe explains what's going on and options well. So glad to find it. Wish all recipes were written this way.

Personally I don't eat cheesecake, but I do Love to make them for others. Thank you very much for this wonderful recipe & I love this step by step as I can get flustered at times.🥰

It was pretty good. It had a bit of a sublte strange flavor to it though, almost bitter.

Extremely delicious cheesecake! But, to get 330 calories per slice you have to cut that 9" cake into 20 slices.

It was a little messy (for me) and especially since it’s my first time doing it, but it was lovely! I had read a comment about it coming out a little bit like creme brûlée on the top at least, and mine happened the same, but it’s delicious.
And I’m a beginner in the kitchen, so following the videos and instructions, everything worked out!
