- 4 cups kale (torn)
- 1 tsp. olive oil
- 1/2 cup cannellini beans (cooked, rinsed if from a can)
- 4 olives (sliced, I used green, kalmata are also good)
- 3 dried tomatoes (sun-, halves, diced)
- 2 Tbsp. feta cheese crumbles
- 1 Tbsp. red onion (diced)
- 1 garlic clove (extra small, minced, 1/4-1/2 tsp)
- 1 Tbsp. balsamic vinegar (golden, or white balsamic)
- 1/2 Tbsp. olive oil
- 1/4 tsp. Dijon mustard
- 3 twists sea salt (and cracked pepper from a grinder, each)
