- 2 lb. boneless skinless chicken breast (cut into small bite size pieces)
- 1 Tbsp. curry powder
- 1 Tbsp. peanut oil
- 2 heads broccoli (separated into bit size pieces)
- 2 cloves garlic (minced)
- 1 tsp. fresh ginger (grated)
- 1 can coconut milk (I used regular, but lite works great)
- 3 Tbsp. red curry paste
- 1/2 Tbsp. cornstarch (dissolved in 2 tablespoons cold water)

Delicious and simple! Made a couple modifications, I used 3 chicken breasts, came out to 1.8 lbs, doubled everything else besides the broccoli, I felt like 2 heads was enough. I also added 1 potato, peeled and sliced thin, as well as 1 carrot peeled and thinly sliced. I sautéed those with the broccoli and garlic and ginger, while sautéing I also sprinkled some extra curry powder on top. Recipe still didn't come out quite spicy enough for my liking so I added extra curry paste to my plate at the end, worked out well cause it was mild enough for my son to eat it as it was! So quick and easy!!
