- 1 lb. boneless skinless chicken (cut into bite size pieces, OMIT for vegan version)
- 1/4 cup coconut oil
- 2 eggplant (small or 1 large, cut into cubes)
- 8 oz. button mushrooms (sliced)
- 1 cup cherry tomatoes
- 2 tsp. fresh ginger
- 2 cloves garlic (minced or grated)
- 3 Tbsp. Thai red curry paste (I used 3)
- 1 Tbsp. curry powder (I like to use spicy yellow curry powder)
- 2 chile de arbol
- 1 fresno pepper

- 15 oz. chickpeas (rinsed + drained)

Really nice tasty recipe, didn’t have all the ingredients but I substituted and it turned out lovely... will use the recipe again
