- extra virgin olive oil (for brushing)
- kosher salt
- freshly ground black pepper
- 1 Tbsp. extra virgin olive oil

- 1 cup fresh tomatoes (diced)
- 1 cup dry white wine
- 2/3 cup green olives (sliced firm, I used Lindsay Sicilian-style Olives)
- 1/4 cup capers (drained, I used Lindsay)
- 1 1/2 Tbsp. lemon zest (fresh)
- 2 Tbsp. fresh lemon juice
- 2 tsp. chopped fresh thyme
- 2 tsp. chopped fresh parsley
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 cup chopped fresh parsley
