- 1 Tbsp. toasted sesame oil
- 1 Tbsp. rapeseed oil
- 1 piece fresh ginger (2.5cm in length, peeled and grated)
- 2 garlic cloves (finely chopped)
- 1 red chilli (deseeded and finely chopped)
- 1 Tbsp. bean paste (Sichuan chilli)
- 1 Tbsp. Shaoxing wine (or dry sherry)
- 2 Tbsp. black sesame paste (or tahini)
- 50 mL vegetable stock
- 3 Tbsp. tamari (or low-sodium light soy sauce)
- 1 Tbsp. black rice vinegar (or balsamic vinegar)
- 2 pinches soft brown sugar
- 2 Tbsp. toasted sesame oil
- 2 Tbsp. chilli oil
- 150 grams beansprouts
- 1 pinch Sichuan peppercorns (toasted and ground to a powder)
- 3 spring onions (sliced into julienne strips)
- 1 handful coriander
- 3 Tbsp. sesame seeds, toasted (white)
