- 2 Tbsp. Shaoxing wine (divided)
- 1 egg white
- 1 1/2 Tbsp. cornstarch
- 1 Tbsp. vegetable oil (plus an additional ½ to ¾ cups)
- 3 cups chicken stock
- 2 cups water
- 5 slices ginger
- 3 cloves garlic (thinly sliced)
- 2 scallions (cut into 2-inch lengths)
- 3/4 lb. soybean sprouts
- 15 grams dried red chili peppers (de-seeded and chopped)
- 10 grams Sichuan peppercorns (green, (ma jiao 麻椒, 3 tablespoons))

Nice, changed bits. First fried chilis and peppers and removed them. Then fied tauge and removed it. Then added rest and boiled fish. Used mortar and pestle to grind peppers and chili and put that on top together with bit of koriander. Next time will need to add more veggie, i think oesterzwam or shitake
Made it second time with green sichaun, amazing how it numbs the mouth. Will have to use less next time though as it was too overpowering. Added oesterzwammen, perfect. Made same way as first time. Used whole egg in johannesbroodpitmeel
