  • 2 tablespoons lime juice
  • 1 red chili (deseeded, finely chopped)
  • 1 clove garlic (minced)
  • 2 tablespoons cilantro leaves (fresh, finely chopped)
  • 3 tablespoons peanut oil
  • 2 limes (halved)
  • 24 shrimp heads (removed, butterflied)
  • 12 ounces watercress

    Directions

    1. In a small bowl, whisk together lime juice, chili, garlic, cilantro and 2 tbsp oil until combined. Set aside.
    2. Heat a grill pan over medium-high heat. Grill lime halves until browned lightly. Remove from heat. Brush shrimp with remaining oil and cook to your liking. Arrange shrimp on serving plates along with watercress. Drizzle with dressing. Serve with limes.
