- 1 Tbsp. vegetable oil
- 1 onions (medium, chopped)
- 2 red bell pepper, sliced
- 2 Tbsp. green bell pepper, sliced
- 2 cloves garlic (finely chopped)
- 1 tsp. dri oregano leaves, crush
- 1 Tbsp. chipotles in adobo
- 2 knorr shrimp flavor bouillon cube
- 3 cups water
- 31 oz. hominy (drained and rinsed)
- 1 1/2 lb. uncook medium shrimp, peel and devein
- 1 lime juice
- 1/4 cup chopped fresh cilantro
- 2 Tbsp. all-purpose flour

Directions
- Heat oil in a large stockpot over medium heat and cook onion and peppers until tender, about 4 minutes, stirring occasionally. Stir in garlic, oregano, chipotle and tomato paste and cook about 1 minute. Sprinkle in flour and cook about 2 minutes, stirring frequently.
- Stir in water, Knorr® Shrimp flavor Bouillon Cubes and hominy and bring to a boil. Reduce heat, add shrimp and simmer covered until shrimp turn pink, about 5 minutes. Stir in lime juice and cilantro. Garnish with diced avocado, sliced lettuce, diced radishes, cheese, chopped onion and lime wedges.

Really good. Will try again. I cut the recipe in half and had no problems with halving the amounts. The only thing that I was unsure of was the tomato paste. Tomato paste was not listed in the list of ingredients, but appeared in the cooking directions. I added 1 tablespoon to the recipe that I made. It seemed to work.

MADE THIS ONE...but used CHICKEN. Cooked chicken first after coating the one inch cubes with flour. Took chicken out of pan and followed the recipe for the balance of ingredients. Was delish... even the three year old asked for more!
