- 1 European cucumber (large, or two smaller ones, European cucumbers with thinner skin are best)
- 1/2 lb. cooked shrimp (medium, thawed overnight in the fridge if frozen)
- 1/2 cup basil (thinly sliced, or Thai basil, more or less to taste)
- 1 Tbsp. agave nectar (Stevia In the Raw Granulated Sweetener, Sugar, or other sweetener of your choice, Use an approved sweetener for South Beach Diet)
- 2 Tbsp. lime juice (fresh-squeezed, I used my fresh-frozen lime juice)
- 2 tsp. fish sauce (preferably Red Boat Fish Sauce)
- 2 tsp. chili garlic sauce (sold near Asian foods in most grocery stores; there are a few good brands)
- 1/2 tsp. salt (more or less to taste)

Spicy! Need to reduce the Garlic Chili Sauce by half next time. But so good! The recipe is good for 2 servings not 4.
