- 1 bay leaf
- 10 whole black peppercorns
- 6 cups water
- 1 cup white wine
- 2 Tbsp. extra-virgin olive oil
- 2 tsp. rice vinegar (not seasoned)

- 1 head lettuce leaves (Bibb, separated)
- 2 Hass avocados (firm, ripe, halved, pitted, peeled, sliced lengthwise, and cut into small pieces)
- 1 cup mint leaves (fresh, torn if large)
