Directions
- In a large Dutch oven on the stovetop, heat oil. Gradually add flour to form a roux, stirring continuously as to not burn. When it reaches the color of chocolate, add onion until transparent, about 5 minutes. Add bell pepper and celery, and continue to cook in the roux until softened, about 4 minutes. Stir in the seasoning.
- Add the stock slowly. Add the Andouille and stir. Bring to a boil and simmer for 30 minutes. Stir in shrimp and continue to simmer for an additional 5-10 minutes.

Great, used 13 ounces Smithfield andouille and made this a serving for 8. Calories are 567 without rice. Did have leftover tomatoes and zucchini and put that in too! More veggies the better. Browned the sausage and added the fat to oil to make one cup total. Cooked in my cast iron pan med low till color of milk chocolate, then put in my bigger pot to finish. Tasted and actually added more spice. Added a couple of shakes of fish sauce and smoke flavor. Also 2 shakes of Worcestershire sauce. So delicious and fast if you pre chop all veggies. Will definitely make again.
