  • 12 wonton wrappers
  • 24 cooked shrimp (peeled, deveined, tails intact)
  • 2 heads baby romaine lettuce (washed and torn)
  • 2 cups bean sprouts
  • 1 bunch fresh mint leaves (picked)
  • lime mayonnaise (Chili-)
  • 1/2 cup mayonnaise
  • 2 kaffir lime leaves (finely chopped)
  • 1 red chili (long, deseeded, finely chopped)
  • 1 teaspoon fresh ginger (finely grated)
  • 1 lime (juiced)

    Directions

    1. Heat oil in a large saucepan over high heat. Working in batches, deep-fry wonton wrappers for 1 min, until golden. Drain on paper towels. Break 4 wonton wrappers into pieces.
    2. For the shrimp salad, combine shrimp, lettuce, bean sprouts, mint and broken wonton wrappers.
    3. For chili-lime mayonnaise, whisk together all ingredients and season to taste.
    4. To serve, place 1 unbroken wonton wrapper on each serving plate. Top with shrimp salad. Drizzle dressing over top. Serve immediately.
