  • 12 shrimp (frozen breaded)
  • 1 loaf French bread baguette
  • 1/3 cup mayonnaise
  • lettuce leaves
  • 2 medium tomatoes (thinly sliced)
  • 1 white onion (small, thinly sliced)
  • 4 gherkins (small, thinly sliced)

    Directions

    1. Preheat the oven to 400°F. Place shrimp on foil-lined baking pan. Spray with no stick cooking spray. Bake for 12-15 mins or until cooked through.
    2. Meanwhile, cut bread in half lengthwise. Spread cut sides with mayonnaise. Layer with lettuce, tomato, onion and gherkins.
    3. Top with shrimp. Cut into 4 equal lengths.
