  • 4 tablespoons vegetable oil (divided)
  • 2 garlic (gloves, minced or pressed)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon red chili flakes
  • 1/2 onion (peeled and sliced)
  • 1/2 red bell pepper (seeded and sliced)
  • 1/2 orange bell pepper (seeded and sliced)
  • 1/2 yellow bell pepper (seeded and sliced)

  • 6 tablespoons fish sauce (high quality, start with 4 tablespoons and add more to taste)
  • 2 tablespoons peanut butter
  • 2 tablespoons lime juice (about ½ large lime, juiced)
  • 1 tablespoon brown sugar
  • 2 teaspoons ground ginger
  • 2 tablespoons basil leaves (chopped)

    This dish is better than take away. Definitely one of the tastiest dishes I have ever made. The whole family loved it. I added a handful of green beans which went perfectly with it.

    Thoroughly enjoyed this curry. Fish sauce has such a unique flavour and i am glad i have now cooked with it. It will be something i will use in the future and really enjoy. Great to see the flavours come together. I did a quarter teaspoon of ground pepper as i felt it needed it. Certainly doesn't need any extra salt than what is in the recipe and the fish sauce comes with an abundance of this. Next time i would lightly pepper the Prawns before cooking. Ain't no Instagram filter gunna make it as yellow as it is in the picture though....

    Great meal, takes longer than the 30minutes it says, plan for an hour, just saying lol. This was delicious, other than subbing the ground ginger for minced ginger I didn’t change anything. Had mine with plain noodles as there was plenty of sauce to go around. Will make again for sure!

    Was absolutely delicious, I didn’t have bell peppers so I grated 1 zucchini and sautéed with onion garlic n celery and a bay leave, everything else was on point with the recipe. Love it, served over quinoa

    Delicious! I used fresh ginger, doubled the sauce ingredients, and omitted the salt during marinating. Even better with the lime garnish!

    The picture looks deceiving. It looks like curry but it is only a sauce. Definitely did not come out yellow. Tasted okay but not what I thought it was going to be.

    The dish is one of the best recipes had in a long time. The peanut sauce is light, but packed with flavor. My teens tried it and absolutely loved it. As the sauce thickens it makes it even better. Will make again for sure!

    This dish is amazing!!! I used no salt peanut butter and reduced fat coconut milk. I don’t like things too spicy so I opted to not use any jalapeño. This dish is best served over some noodles or rice.. •And if you have leftovers , I made the most amazing quesadilla! I cut the rest of the shrimp in half, added more fresh cilantro & green onions and put that between some flour tortillas. I used basil infused olive oil to cook the quesadilla was unbelievable! I will definitely be making this again!

    Soooo good. Didn’t have fresh basil so I let dry basil simmer in the sauce and it was oh so delicious. Garnished with limes and pepper flakes.
