Preheat the oven to 400˚F.

Chop the onion. Shred the chicken with your fingers. Mince the chipotles.

Heat the olive oil in a large frying pan over medium heat. Add the onion and cook, stirring often, until transparent, 4-5 minutes. Add the chicken and season with salt. Cook, stirring occasionally, until hot, 3-4 minutes. Fold in the adobo sauce and distribute evenly. Remove from heat.

Line the bottom of a baking dish with parchment paper. Arrange the taco shells upright in baking dish.

Evenly divide the chicken mixture between the taco shells, and sprinkle with the cheese.

Bake the tacos on middle rack of oven until the cheese melts, 10-12 minutes. Meanwhile, prepare the toppings.

Stack the lettuce leaves and slice crosswise. Dice the tomato. Cut the lime into wedges. Dice the avocado.
PRO TIP For beautifully diced avocado, quarter it lengthwise and twist quarters apart. Peel the pieces with your fingers and remove the pit. Then dice.

Check to see that tacos are done. Remove from oven or add time as needed.
