  • 1 apple (diced and tossed with the juice of 1/2 lemon)

  • 4 shallots (thinly sliced, or 2 very large shallots)
  • 3 tablespoons olive oil
  • 1/3 cup crumbled blue cheese
  • 1/4 cup toasted pumpkin seeds

  • 3 tablespoons apple cider vinegar
