  • 1 cup butter (chopped, softened)
  • 1/3 cup granulated sugar
  • 1 cup all purpose flour (+ 2 tbsp)
  • 1/2 cup rice flour
  • 2 tablespoons granulated sugar

    Directions

    1. Preheat oven to 300°F. Line 2 baking trays with parchment paper.
    2. Cream butter and sugar until light and fluffy. Sift flour and 1/4 tsp salt together then mix in until well combined. Turn out onto a lightly floured surface and gather dough into a ball. Shape into 2 - 7 inch discs and transfer to prepared trays. Scallop edges and sprinkle sugar over top. Bake for 35-40 mins, or until golden brown. Let cool completely on trays. Break into wedges.
