- 6 lb. bone-in short ribs (5- ,organic grass-fed, about 10 pieces)
- kosher salt
- freshly ground black pepper (to season meat)
- 2 Tbsp. avocado oil
- 2 onions (large, diced, about 2 cups)
- 3 medium carrots (diced, 1 heaping cup)
- 3 celery stalks (diced, 1 heaping cup)
- 4 cloves garlic (large ,finely chopped, about 1 tablespoon)
- 1 Tbsp. anchovy paste
- 1 Tbsp. apple cider vinegar (or sherry vinegar)
- 1 Tbsp. Dijon mustard (GF)
- 1 Tbsp. coconut amino
- 1 oz. dried porcini mushrooms (heaping cup)
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 2 sprigs fresh rosemary
- 2 bay leaves
- 3 1/2 cups water
- 3 Tbsp. beef broth (organic, concentrate, I use Kitchen Accomplice)
- 1 1/2 cups red wine (preferably a dry)
- 1 cup cherry juice (tart)
- kosher salt (additional , to taste, if needed)
- crushed black pepper (to taste, if needed)
- 2 lb. lasagna sheets (fresh GF, or fettucini, I cut lasagna sheets into strips)
