- 2 poblano peppers (roasted and chopped)
- 3 celery ribs (finely chopped)
- 2 large carrots (finely chopped)
- 2 cloves garlic (large, finely chopped)
- 1 jalapeño (large, finely chopped)
- 2 bay leaves
- 1 Tbsp. salt
- 1 Tbsp. Mexican oregano (dried)
- 1 Tbsp. chili powder (mexican)
- 1 tsp. coriander
- 1 cup red wine (french, like pinot noir)
- 56 oz. stewed tomatoes (2 large cans, whole)
- 2 cups stock (beef, chicken, or vegetable)
- 1 can black beans (small, drained and rinsed)
- 1 can red beans (small, drained and rinsed)
- salt
- pepper (for seasoning)
- cheddar (grated sharp, optional)
- diced onions (for garnish, optional)
