- 2 cups shiitake mushrooms (stems removed and caps wiped clean)
- 1 cup garbanzo beans (green, or normal garbanzos)
- 1/2 cup onion (diced)
- 1 clove garlic (diced)
- 1/2 cup brown rice (cooked)
- 1/2 cup parsley
- 1 tsp. cumin
- 1/2 tsp. cayenne pepper
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
- 1 Tbsp. olive oil (+ more for pan frying)
