  • 1 tablespoon sherry vinegar
  • 1/2 cup wine (Riesling, + 2 TableSpoons)

  • 1/2 cup chopped celery
  • 2 tablespoons chopped fresh thyme
  • 1 tablespoon minced garlic

  • 3/4 teaspoon ground black pepper (divided in 1/4)
