- 2 liters stock (prawns, recipe follows)

- 12 scallops
- 12 prawns (large, peeled, deveined and tails on, reserve for prawns stock)
- 18 oysters (shucked)
- 180 grams lump crabmeat
- rapeseed oil
- 250 grams okra (cut into 1-cm thick slices)
- 200 grams yellow cornmeal
- salt
- ground black pepper
- prawns (reserved, shell, raw)
- 1 onion (large, coarsely chopped)
- 1 carrot (small, coarsely chopped)
- 1/2 celery stalks (medium)
- 1.5 liters water
- 250 mL white wine
- 1 fresh tomato (medium, or 130ml tinned plum tomatoes)
