- 3 cups cauliflower (cut into small florets, tip: prepare veggies and chickpeas while chicken is marinating)
- 3 cups broccoli (cut into small florets)
- 1/4 red onion (cut into large slices)
- 1 1/2 Tbsp. olive oil
- 1/4 tsp. sea salt
- black pepper
- 1 cup chickpeas (drained and rinsed)
- 1/2 tsp. sweet paprika
- 2 skinless boneless chicken thighs (see notes to use another cut of chicken)
- 1 Tbsp. spice mix (za’atar)
- 1 Tbsp. lemon juice
- 1/2 cup tahini paste
- 1 garlic (small, pressed or minced very thinly)
- 1/4 cup lemon juice
- 1/2 cup ice water
- 1/4 tsp. sea salt
- 1 pinch cumin
