- 8 oz. mushrooms (sliced)
- 1/2 red onion (a large, sliced into half moons)
- 4 cups Brussels sprouts (bottoms trimmed off and cut into ¼ inch/6 mm slices)
- 1/2 acorn squash (seeds removed and cut into ½ inch/12 mm slices)
- 1 lb. chicken breast (/.5 kg protein like, tofu, tempeh, shrimp, pork or beef, cut into 1 inch/2.5 cm cubes)
- 1 Tbsp. oil (+1 tsp high smoke point, refined coconut, refined olive, canola, grape seed)
- 1/2 tsp. sea salt
- 1 Tbsp. ginger (grated)
- 2 cloves garlic (minced)
- 3 green onions (sliced, on a diagonal for fanciness)
- 1 Tbsp. hoisin sauce (use gluten free variety if GF)
- 2 Tbsp. tamari sauce (or soy)
- 1 Tbsp. maple syrup
- 1 tsp. chili garlic sauce (sambal oelek, or other chili paste)
- 1/2 tsp. orange zest
- 3 Tbsp. water
