- 2 cups chopped kale (from 1 small bunch, make sure to remove tough stems)
- 2 Tbsp. extra light olive oil (divided)
- 4 bone-in, skin-on chicken thighs
- 1/2 avocado
- 1 clove garlic (finely minced)
- 2 Tbsp. fresh cilantro (leaves only)
- 2 scallions (roughly chopped)
- 2 limes (zested and juiced)
