- 15 oz. black beans (drained and rinsed)
- 1 cup frozen corn
- 15 oz. Del Monte Fiesta Corn
- 1/3 cup diced onion (finely)
- 1/4 cup poblano pepper (finely diced, optional)
- 1 garlic (large segment of, crushed, about 1 tsp if using jarred garlic)
- 1 can rotel (mild, drained)
- 1 tsp. cumin
- 1/2 tsp. paprika (I like smoked paprika)
- 1/8 tsp. salt
- 10 oz. enchilada sauce (Mild)
- 2 cups cheddar cheese (shredded)
