- 12 oz. sausage (precooked, or kielbasa, pork, turkey, or beef sausage or kielbasa; I used beef polska kielbasa, sliced into 1/2-inch rounds)
- 1 yellow bell pepper (medium/large, diced into bite sized pieces, red, orange, or green pepper may be substituted)
- 1 zucchini (medium/large, trimmed and sliced into bite sized pieces)
- 1 cup cherry tomatoes
- 3 Tbsp. olive oil
- 1 Tbsp. onion flakes (dried)
- 1 Tbsp. smoked paprika (regular paprika may be substituted)
- 1 Tbsp. dried parsley
- 1 Tbsp. dried oregano
- 1 tsp. kosher salt (or to taste)
- 1/2 tsp. freshly grated black pepper (or to taste)

Delicious!! Only complaint I have is that I didn’t make a double batch. Cooking time was right on at 30 minutes. Served over rice. Highly recommend.

Absolutely amazing so easy used all the Veggies out of the fridge and a couple from the garden will make this again added a little spice

We loved that we used a lot of fresh veggies that were in my fridge but it just seemed like there needed to be more of a sauce. It was quite easy to prepare though and we served it over rice. Had a side of fresh fruit.

I doubled the zucchini/cherry tomatoes and used turkey cheddar brats, Delicious!

We liked it but served it over brown rice which was key. I used green beans, onions, grape tomatoes, yellow bell pepper for veggies, with chicken sausage.

So yummy! Used broccoli. Have made multiple times, and I love how easy it is.

First off the picture shows broccoli but the ingredients doesn’t list it. I had broccoli on hand but did not add if by because the zucchini I had was ginormous! I was afraid this recipe would not have enough spice for all the veg but it was perfect! Very good recipe!

Delicious! I used chicken-apple sausage browned in a skillet, and added squash and asparagus the first time I made it. 45 minutes was too long. The veggies were mushy. I made it again tonight. I browned some chicken sausage before putting it in the oven, and this time I added yellow squash and mushrooms, and cooked it for only 15 minutes. The veggies came out the way I like them.

I love this recipe! I make it about once a week! I have used broccoli, cauliflower, leeks, onion, tomatoes, squash, peppers, potatoes, Brussel sprouts— all delicious I sprinkle garlic in addition to other spices so good!

It turned out great but I used smoked sausage instead of pork but was still lovely empty plates all round the table

I too used what I had on hand. Green Bell Pepper, Carrots, Asparagus, Brocolli & two different sausages. I used avocado oil. This was very easy and very good! Great way to go through your vegetable bins and clear it out. I will definitely make this more often, thank you for sharing.
