  • 2 yellow onions (large)
  • 1 pound baby potatoes
  • 3 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 Italian sausages

    Directions

    1. Preheat oven to 375°F.
    2. Cut bell pepper into 1/2-inch strips. Halve onions and cut into 1/2-inch strips. Halve potatoes.
