I was really pleased with how this turned out. It looked phenomenal after I made it, make sure to cut the peppers and onions in to large chunks as it looks especially cool and tastes great that way (vs dicing small). I prepped it Sunday for Monday's dinner by chopping all the veggies and chicken, and covering it on a pan overnight. Then made the sauce Monday and it turned out great!
