  • 2 tablespoons olive (olive, Mediterranean)
  • 2 whole Roma tomatoes (halved long way)
  • 1 whole white onion (quartered)
  • 1 1/2 leek (sliced, halved)
  • 8 spears asparagus
  • 1/2 cup pitted olives (whole, halved + chopped)
  • 1 pinch Himalayan salt
  • 1 pinch black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon oregano

    Great! I used flounder as a substitute for cod. I let it bake for 23 minutes to perfection. Really simple and easy to make. Will be doing more sheet pan recipes.

    Very easy to make and light. I used baby green beans instead of asparagus and it turned out tasty. I also added a sesame marinade as a side dip for some stronger flavors.

    it was easy and I did some substitutes. I used artichoke hearts from a jar plus capers plus asparagus from a 10 plus cherry tomatoes and a balsamic glaze plus onion. Bas basically any old thing I had lying around the house. The fish was lovely. my wife and I loved it. my three children ages 12, 12, and 16 were not particularly fond. I would make this again for just adults probably next time.

    Spot on! One cannae go wrong with this recipe! I spiced it up a bit and added some red peppers (why not?) Thoroughly enjoyable and in the week night dinner roster for sure!

    I tapped the cod dry, the put all of the ingredients in a bowl, added quartered fingerling potatoes, and used 1/2 c cherry tomatoes (halved) mixed in the bowl then added to the pan. didnt have chilies so added a piri piri mixture. delish. a definite keeper!

    The onions needed to be cooked longer to create a more delicious char but other than that no complaints. Very good and I enjoyed the leek which I hadn’t used before.

    loved it! didn't use olives because my kids don't like them (heathens), but could see capers in the future. simple and clean flavors as another reviewer stated. super easy for weeknightm

    Outstanding. Simple, clean flavors and healthy. Good fats. Only thing I added was fresh mushrooms cut in half. I may add a few capers next time. Maybe a squeeze of fresh lemon or orange. A big YUM on this one! An easy way to eat clean, whole foods. Thank you, Yummly and Garden in the Kitchen!

    Delicious - used fresh oregano and no leeks as we had none on hand. The whole family loved it!
