  • 2 tablespoons olive (olive, Mediterranean)
  • 2 whole Roma tomatoes (halved long way)
  • 1 whole white onion (quartered)
  • 1 1/2 leek (sliced, halved)
  • 8 spears asparagus
  • 1/2 cup pitted olives (whole, halved + chopped)
  • 1 pinch Himalayan salt
  • 1 pinch black pepper
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon oregano

    Very good recipe that can be easily adjusted to suit your taste. I didn’t have leeks and I added red peppers and baby potatoes. Also added smoked paprika, garlic powder and a Greek seasoning mix that probably had oregano, thyme, basil and marjoram. Total crowd pleaser and it was so easy.

    We made this a couple nights ago. Lacked flavor in my opinion. I will make again but probably season more to our family’s palates.
    Looked beautiful and tasted delicious.

    This dish was very easy to prepare, and the taste was right on point! Everyone enjoyed it. Next time I will add a sprinkle of feta cheese for a wonderful bit of flavor!

    It was yummy. I used Kalamata olives and added mushrooms. Entire family enjoyed it excited to have something new to put in the rotation. Would like to see about giving it a little more spice/flavor next time without adding more red pepper flakes.
