- 2 Tbsp. olive (olive, Mediterranean)
- 2 whole Roma tomatoes (halved long way)
- 1 whole white onion (quartered)
- 1 1/2 leek (sliced, halved)
- 8 spears asparagus
- 1/2 cup pitted olives (whole, halved + chopped)
- 1 pinch Himalayan salt
- 1 pinch black pepper
- 1/2 tsp. red pepper flakes

I used tilapia since that’s what I had and I loved it. The fact that it was all in one pan was awesome.

Absolutely delicious!! Added to our favorites. So easy, and so tasty. I added kalamato olives as well as green olives. I added cajun seasoning to the cod, but did everything else the same. I marinated the artichokes in olive oil, lemon juice and salt, adding them to our plates at the time of serving. So yummy and healthy.

Very good recipe that can be easily adjusted to suit your taste. I didn’t have leeks and I added red peppers and baby potatoes. Also added smoked paprika, garlic powder and a Greek seasoning mix that probably had oregano, thyme, basil and marjoram. Total crowd pleaser and it was so easy.

We made this a couple nights ago. Lacked flavor in my opinion. I will make again but probably season more to our family’s palates.

This dish was very easy to prepare, and the taste was right on point! Everyone enjoyed it. Next time I will add a sprinkle of feta cheese for a wonderful bit of flavor!

I used the oil from my olives and greek seasoning with grouper and shrimp. Fantastic! Served it with Greek potatos.

Soooo good. I added pepperoncinis and feta at the end. Very easy to make. Got the kids involved to help chop the ingredients
