This is a winner!! My picky elders who have the palates of toddlers were so happy with this dish, they cleaned their plates and took leftovers home. I cannot recommend this recipe enough.

My family enjoyed the eggplant very much. I had some homemade sauce from the day before so I I didn’t have to open a jar. Looking forward to serving it to company.

It was excellent. I made sure that the eggplant was sliced aa,thin as possible. I used pankco instead of bread crumbs. Also I used grated pecorino romano, insread of Mozzarella. Add a little Angel Hair sphagehtti and lots of steamed vegetables. Delicious.

Easy and delicious (and great to reheat in an air fryer). I use a flavored marinara rather than plain - makes a big difference. Also tried this with fresh rather than shredded mozzarella and I highly recommend it!

Easy recipe to make. I used leftover spaghetti sauce with meat and mushrooms instead of just marinara. Also mixed cottage cheese with some Parmesan to make it more cheesy, but topped all with mozzarella. Will make again

Excellent and easy! Didn't have fresh basil so skipped. Used a cheese mix I had on hand. Perfect with a spinach salad

The homepage recipe called for 30g panko breadcrumbs but the one with the directions called for 1 cup (abt 90g) which was the one I looked at, so I unfortunately ended up with lots of wasted breadcrumbs. I wish these recipe writers would be more vigilant as mistakes like these also affect the taste.

Delicious! A small deviation from my regular recipe. A big hit with the family! Easy to scale down for two...or add more for company.

Delicious. Definitely going to make my eggplant this was from now on. Only thing I did differently was on last oven bake with sauce and cheese, I baked for only 5 mins.

Super easy and delicious. I heated up leftover in a hot dry skillet and made a sandwich out of it the next day. Yum!

This recipe is similar to how we did it. The addition of salting the eggplant really improved the texture and taste!!!!!

Mine came out too salty after using the salting process. I will stick to my usual method of breading.

it was perfect! defonitely follow the first step about salting the eggplant. you can put these on a bed of pasta of your choice; we used regular spaghetti noodles.

Turned out great. I cut some of the eggplant too thick & did not like it as much as the thinner ones ;)
