This was delicious!! Have made it with chicken, pork and beef. This also works on the grill. Feel free to add or subtract veggies you like/don't like. I make a big batch of this on the weekend and take it to work for lunch during the week. My coworkers always comment on how good it smells and how nice it looks. Definitely a keeper!

Super easy to make! Made a side dish of brown rice and it was amazing! Definitely will make this again!

Really, really good. I forgot to add in the tomatoes, and decided to put in a few small radishes. Seasoning was great too.
I left the pan in the oven for about 25 minutes, because i like my chicken just a little more done.
