  • 1 3/4 inches ginger (piece of, peeled and minced, see Note up top)
  • 4 cloves garlic (minced or pressed)
  • 1 green chili (fresh, I used a jalapeno, seeded and minced)
  • 1/2 cup yogurt (whole-milk)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon chili powder (or cayenne, or adjusted to taste, I used 1/4 teaspoon)
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon granulated sugar
  • 1 teaspoon paprika
  • 1 teaspoon Garam Masala
  • 2 pounds chicken thighs (drumsticks or halved chicken breasts, all skin-on, bone-in)
  • 3 tablespoons olive oil
  • 1 1/4 pounds yukon gold potatoes (about 4 medium, peeled if desired, cut into 3/4-inch chunks)
  • 1 3/4 pounds florets (1 small or half a very large head cauliflower, cut into 3/4-inch-wide)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cumin seeds
  • 3 slices red onion
  • lemon wedges

  • yogurt (Dollops of)
  • 3 tablespoons chopped cilantro (roughly, parsley or mint, or a mix therof)

    So good! I was out of yogurt so I used almond coconut milk! I’m also out of cauliflower so I double the potatoes and wow! The flavors are exquisite, the chicken is juicy and I can’t believe the prep work took the longest! Easy to make and cleanup! I’m making this next time I have company over!

    This turned out great! Very easy to make and tasted like it was from a restaurant. We'll make this again!

    This was great. Substituted sweet potato for cauliflower and cut down on the spices a little as family doesn't like spicy food. Also substituted non fat yogurt, fine in marinade but might be nice to have full fat for topping.

    Fantastic recipe. Super easy to make and really delicious! I'm usually a slow prepper, but I got this dinner ready and on the table in no time. This is a keeper.
