Preheat the oven to 400°F.

Cut the sausages into 1/2-inch rounds. Wash and chop the sweet potatoes into 3/4-inch cubes. Trim ends from the Brussels sprouts, and cut them in half if they're large. Slice the apple into 1/2-inch wedges, then cut in half crosswise.

Whisk together the olive oil, mustard, brown sugar, salt, and pepper in a large mixing bowl. Add the sausages, sweet potatoes, Brussels sprouts, and apple. Toss until evenly coated. Arrange the sausage mixture in an even layer on a large baking sheet.

Bake the sausages and vegetables on middle rack of oven, tossing ingredients with a spatula once or twice throughout cook time, until sausage and vegetables are browned and easily pierced with a fork, 40-45 minutes.

Check to see that sausage and vegetables are done. Remove from oven or add time as needed.
