- 2 zucchini squash (small-medium, about 12 ounces, ends trimmed and cut into 1-inch pieces)
- 1 tsp. yellow squash (0 2 small-medium, about 12 ounces, ends trimmed and cut into 1-inch pieces)
- 1 orange bell pepper (cored, seeded, and cut into 1-inch pieces)
- 1 red onion (medium, cut into 1-inch pieces)
- 1 head broccoli (about 12 ounces, stem trimmed, and florets cut into 1-inch pieces or so)
- 1 1/2 lb. boneless, skinless chicken breasts (cut into thin strips)
- 1/3 cup balsamic vinegar
- 3 Tbsp. olive oil (avocado oil, or canola/vegetable oil)
- 2 Tbsp. honey (depending on how sweet you want it)
- 1 tsp. dried basil
- 1/2 tsp. dried oregano
- 1 tsp. salt (I use coarse, kosher salt)
- 1/2 tsp. pepper (I use coarsely ground black pepper)
- 2 cups cherry tomatoes (halved)
